After bottling, our wines are moved into the refrigerated warehouse where they’re kept at a constant year-round temperature of 55 degrees. This insures protection from damage that might occur with fluctuating temperatures.
The length of bottle-aging time varies depending on the varietal, but in general we prefer to have around 1 year of aging to allow full recovery from “bottling shock”. Certain reds are bottle-aged even longer to reduce the level of tannins and “soften” the wine, making for a more mature and drinkable wine upon it’s release.
