The decision of when to bottle a particular wine is made by one of several reasons; the need fortank or barrel space, we're selling out of the previous vintage, or judging that the ageing has done it's work and the wine is ready. After determining that the sulfite level is good, it's time to bottle.
Our bottling operation is fairly low-tech, with a manual, gravity-feed, 6-bottle fill station and a manual one-at-a-time corker. If the wine has been stored in multiple containers like barrels, we combine everything into one tank so there's a consistent flavor throughout the bottling.
